December of 2019 Kauffmans Keep partnered with a local family farm to provide our customers with their incredible grass fed Jersey beef. Frequently dairy breeds get a bad rap for having poor meat quality, that is not the case with this beef, it has a phenomenal dark color and beautiful marbling which is made even more amazing after our processor lets it hang hang and age for 2 week. Aging allows enzymes in the meat to break down slightly and helps concentrate the flavor. Most grocery store meat is packaged the same day which does not allow this process to happen that unfortunately creates a more bland tasteless meat. We partnered with this family because of a shared desire to steward the earth the best way we know how, provide our local communities with healthy sustainable food, and provide the best life possible for our animals.
